We finished our harvest and pressing last Friday following many weather related delays which caused lots of frustration. When the sun did shine, the harvesting and pressing were a delight. Finally I can enjoy birdsong without worrying about how much of our crop they are feasting on! The oils taste delicious and are now in their respective tanks settling, to enable the oil to separate from any residual sediment before we rack the oil into clean tanks ready for bottling. I made a lemon infused oil this year, which involved putting Yen Ben lemons through the crusher, into the mixing vat with our last batch of olives and finally, through the press. This oil, along with herbs, will be used to marinade eating olives. If I find flavours I am happy with, we will add eating olives to our range. Watch this space…
